
Domaine Henri Boillot, previously Domaine Jean Boillot, was established in 1885 by the founder Henri Boillot. In 1975 another Henri became responsible for the Domaine winery and, in 2005, buyed the entire property, from her brother and sister, becoming the unique owner. Besides, since 2008, he was joined by his son Guillaume who slowly became, in 2012, head of viticulture and responsible for vinification of red wines.
Today the Domain extends over 14 acres in a Burgundy sub-area between Puligny-Montrachet and Volnay, in the southern part of the Côte de Beaune. There it puts a lot of effort into respecting as much as possible the winemaking process both in vine, interfering with the growing process as little as possible, and in cellar, using a balanced mix between traditional methods of vinification and ageing.
The Clos de la Mouchère vineyard is a Monopole, an enclave of 4 hectares in the denomination premier cru Puligny-Montrachet Les Perrières which owes its name to the fact that, according to tradition, the grapes produced there were so sweet to attract the flies (Mouches), greedy for sugar. Its grapes, picked at precisely the right moment and pressed at low temperature, ferment in barrique (60% new and 40% old) for 12-14 months before being gently filtered and bottled.
This golden yellow with green highlights 2018 vintage shows already in the goblet a rare concentration, with powerful and elegant smells of tangerine, green apple, peach in syrup , dried fruit, lemon peel and acacia honey, with twist of vanilla, Normandy butter, toasted hazelnut and hydrocarbons. The mouthfeel is very smooth, deep and powerful, with fantastic minerality and that much freshness which is enough foe a perfect balance, with a very long and buttery finish.
